Greetings to whoever out there finds this. My first blog.
This is a colorful dish I was treated to yesterday when I ordered a "Roller Beet" crepe from the crepe trailer on S.Congress St. in Austin, TX. When it was placed in front of me I know my mouth dropped seeing the bright colors, but it was delicious as well. Beets, spinach, and Gorgonzola cheese wrapped in a delicious crepe. I have no idea how the crepe got to be this lime green color and I decided NOT to ask, just enjoy. Along with my Thai Ice Tea.
